Pork leaf fat comes from around the kidneys of the animal, and has a mild flavor. Ours is hand trimmed, rendered down in small batches, and filtered to make it smooth and creamy. This makes it a great lard for baking. It makes beautiful, flaky pie crusts and you may find that it is the missing ingredient to recreating your grandma's cookie recipe.
