For old fashioned southern flavor, choose fatback! Ours is skinless and unsalted, so you can control the level of sodium according to your taste-buds. Use to season veggies or render to make a high quality cooking lard (this will have a pork flavor, unlike our leaf fat). Tasty when making fried potatoes and you want a golden crisp bite. This also goes great in killed lettuce. The packages vary in thickness and streaky meat. If you are looking for a particular attribute, let us know and we will do our best, but we can't guarantee.
