Pastured Pork Belly 12 oz. Pork Belly, Skinless, blocked

This is plain pork belly. If you want bacon, check out our bacon page. I'm not trying to talk you out of the belly, I just want to make sure you're not disappointed if you were looking for bacon.

I'm not a great cook, but I did roast the pork belly that you see pictured. The recipe I used is below. I enjoyed it, and I know this is weird, but something about it reminded me of my grandma's fried chicken (that's a good thing).

Pork Belly

-1 pound skinless pork belly
-2 teaspoons fine salt
-2 teaspoons sugar
-a few grinds of black pepper

1. Season the belly with salt, sugar, and black pepper. Cover and refrigerate overnight.
2. Preheat the oven to 450° F.
3. Roast the belly for 30 minutes, fat side up. Reduce heat to 275°F and roast for one hour or more, until tender but not mushy. (Larger pieces of belly will take longer)
4. Remove from the oven and let cool to room temperature. Wrap tightly in plastic and refrigerate until chilled through - at least a few hours and up to 2 days.
5. Once chilled, slice into thick pieces and brown in a small amount of oil.

sugar-free bacon Smoked Side Meat

This smoked side meat is basically chunks of bacon. This is the belly of the pig, cured and smoked. You can slice it yourself to make bacon. I use it as seasoning meat in my pinto beans. It gives them a nice smoky, bacon flavor. If you're in Oakboro, stop in at Tammy's Restaurant, she uses it in her pintos as well and she makes some tasty beans.

bacon Bacon

This fatty but delicious cut comes from the belly. It's cured and smoked without synthetic nitrates or nitrites, then sliced into strips. Bacon can be fried or baked in the oven. It's great on or in a burger, you can wrap it around chops or tenderloin. Crumble up crispy leftover bacon and add it to a salad! I'm kidding on that one. Who would have leftover bacon? :) Don't forget to save that precious bacon grease! You need that for cooking your eggs, and seasoning your beans. I had someone tell me once that they use it to pop popcorn!
